有關扣ot

本人係酒店廚房任職廚師 本公司有ot補鐘及補假機制
但可能由於太多鐘 廚房大佬經常以 「雪櫃未執好」「地方未清潔好」的理里扣除該日工作的ot鐘
請問上述情況算無理扣薪的情況嗎？ 是犯法的嗎？
